Muffin ( Blueberry)

INGREDIENTS:

1 1/2 cups all purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup sugar
4 tbsp butter ( soften)
1 large egg, beaten
3/4 cup plus 2 tbsp milk
1 cup blueberry

MIXTURES :

Preheat oven to 400 degree . Line muffin pan with 10 paper muffin cups or spray with non-stick cooking spray. Fill empty cups halfway with watter.
sift flour, baking powder and salt into a large bowl.Stir in the sugar. In a separate bowl, whisk together the melted butter, egg and milk.Pour the wet ingredients and whisk until just blended (mixture should be slightly lumpy) . ADD the blueberries to bowl and stir them in just enough to combine. Divide the batter evenly among the prepared muffin cups.Bake the muffins until golden, 18-24 minutes. Remove the muffins from the pan and transfer to wire rack to cool.

MUFFINS are best served warm.

Garlic Mashed Potatoes

INGREDIENTS :                                                        

2 lb potatoes                                                               
1 bulb garlic                                                                
1/2 Tbsp olive oil                                                                                                     
1 Tbsp butter (soften)                                                 
Dash of salt                                                                
Dash of black pepper                                                                                
Fresh  cut chives                                                      
                                                                                 
MIXTURE:


Preheat oven to 375 degree.Peel potatoes and into
cube size.Place in a pot of lightly salted water.
Bring to a boil,
then reduce heat and simmer until cooked
about 20 minutes.
SEPARATE garlic, do not peel
them. Place in a bowl, add olive oil, toss to coat.
place a baking sheet and oven roast until soften, for
10 minutes. Allow to cool.
DRAIN potatoes and return to pot. Mash slightly
add sour cream and butter.Squeeze pulp garlic
into pot.Add salt and black pepper.
MASH potatoes until combined and smooth.
Transfer to a serving bowl.
Sprinkle over mashed potatoes with fresh cut

Delicious Kutsinta

Ingredients:
1 cup rice flour
2 cups brown sugar
3 cups water
1 tsp lye water ( Oriental Store)
Fresh grated coconut ( you can use frozen , just thraw it but the best taste it the freah one)

Instruction:

Mix all above ingredients.Pour the mixture in a muffin cups, halfway full.Steam in a pan w/cover w/ 2 inches of water. Cook for 30 minutes. remove from the muffin cups and serve with grated coconut.

Pork and Chicken Adobo

Ingredient:
1/2 kilo chicken ( cut into 2" serving )
1/2 kilo pork     (cut into 2" cube styles)
1/2 Tbsp pepper
2 1/2 tbs sea salt
3 garlic cloves ( crushed)
1 cup vinegar
1/4 cup soy sauce
1/3 cup bayleaves
1 Tbsp Olive oil ( or Cooking Oil)

Instruction:
Mix pork , chicken pepper, sea salt, garlic, vinegar ( refrigerate it overnight). Trsanfer to a pot boil , simmer until meat are cook and tender.Remove garlic, set aside. In a saucepan, fry the drained cut meats until it turns brown.Sautee garlic in small portion of olive oil. Return the cooked meat and garlic to the stock , spread bay leaves. Please do not add the fat unless a really fatty sauce is desired. Simmer until sauce is thickens.

Suggestion:
To thicken w/ the addition of chicken or pork liver pounded.
Soy sauce is optional. Make sure to add the meat before you fry .

Serve with white or brown rice !
