Garlic Mashed Potatoes

INGREDIENTS :                                                        

2 lb potatoes                                                               
1 bulb garlic                                                                
1/2 Tbsp olive oil                                                                                                     
1 Tbsp butter (soften)                                                 
Dash of salt                                                                
Dash of black pepper                                                                                
Fresh  cut chives                                                      
                                                                                 
MIXTURE:


Preheat oven to 375 degree.Peel potatoes and into
cube size.Place in a pot of lightly salted water.
Bring to a boil,
then reduce heat and simmer until cooked
about 20 minutes.
SEPARATE garlic, do not peel
them. Place in a bowl, add olive oil, toss to coat.
place a baking sheet and oven roast until soften, for
10 minutes. Allow to cool.
DRAIN potatoes and return to pot. Mash slightly
add sour cream and butter.Squeeze pulp garlic
into pot.Add salt and black pepper.
MASH potatoes until combined and smooth.
Transfer to a serving bowl.
Sprinkle over mashed potatoes with fresh cut
